Today is the last day.  I was not able to do it everyday, and I got a late start.  I did enjoy how comprehensive and how much I was able to learn from this challenge.

What stood out to you most about your carbon footprint? What surprised you or sparked curiosity? Where can you take most immediate action?

I am pretty good at minimizing waste.  I strive for zero waste.  I use very little one-time plastic.  I am stuck in a fossil fuel world, but do what I can by having solar panels on my roof and drive a hybrid car.

  • REFLECTION QUESTION
Food, Agriculture, and Land Use Zero-waste Cooking
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    Joyce Goldsmith's avatar
    Joyce Goldsmith 4/15/2021 5:54 PM
I do this all the top.  I take the precooked vegetable scraps and use them to make vegetable broth.  I use in soups and gravies and sauces all the time.  Easy to freeze.
