    I learned a lot from the Ecochallenge this past month. I have cut back on meat and dairy products and had the chance to explore the city around me. I have also made use of many reusable items like plastic containers from stores. Because I have had smaller portions and spent a lot of time eating without distraction, I have learned more about my body and even shed a few pounds this month. I would recommend this challenge to anyone looking to make a change not only for themselves, but for the planet and society as a whole as well.

    Eating plant based is something that never appealed to me. Now that I have taken the time to have one plant-based meal a day has allowed me to explore more diverse meals while still eating clean. I typically eat some fruits or veggies for my vegan meal each day, but I have been experimenting with meat substitutes as well and have enjoyed those too!

    I have really been enjoying eating mindfully. I have learned to take the time to actually enjoy my meal along with my surroundings. I started eating outside on my back patio too!

    Mindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

    When I practice mindfulness when eating, I am more aware of my body. I can better tell when I am full now that I eat mindfully and intuitively.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    Meat is not only expensive to prepare, it is expensive to keep. Other countries need the animals to produce their foods like milk and cheese, and killing the animal for their meat would cost them a fortune. Eating more meat to simply put, puts more carbon emissions into the atmosphere.

    What are some more "R's" you could add to your daily practice to reduce your waste?

    I reuse much more now due to the ecochallenge. I had the option to buy a large drink that came with a regular plastic cup or a small drink for the same price, but in a reusable glass cup. Of course I chose the reusable option and now I have a lovely dried flower vase or cup!

    While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

    I have noticed a change in my eating habits since doing the ecochallenge. I cut back so much on my food consumption, and now there is more food readily available to others!

    What have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?

    I went on a nice hike today and enjoyed seeing all the beautiful trees practically untouched by man. If I did not hear the loud construction noises, I would have felt completely submerged in nature!
