    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

    I tend to cook zero waste, by cooking parts of a food that would be easier to discard, such as the central ribs of collards and other greens. Also, if I see that something is looking wilted or may start spoiling, I cook it before it goes bad. Still, things do sometimes get lost in the refrigerator

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    I spent most of the day learning about the various issues in other commitments. I often have 3 meatless meals a day, but today I ate a soup that I made last week and it was made with bones and vegetables.
