Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Judith Lechner 4/21/2021 5:57 PMI tend to cook zero waste, by cooking parts of a food that would be easier to discard, such as the central ribs of collards and other greens. Also, if I see that something is looking wilted or may start spoiling, I cook it before it goes bad. Still, things do sometimes get lost in the refrigerator -

Judith Lechner 4/21/2021 5:54 PMI spent most of the day learning about the various issues in other commitments. I often have 3 meatless meals a day, but today I ate a soup that I made last week and it was made with bones and vegetables.
