I’m not a huge fan of seafood but what I do eat follows guidelines. However I am working on incorporating additional seafood choices into our dinner menus. -

Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Deborah Clevenger 4/30/2021 5:15 PMWe use the left over vegetable pieces when we make homemade soup or just broth. We also use the leftover parts of fruit for baking muffins. When we make mashed potatoes we use the whole potato skin and all. -

REFLECTION QUESTIONFood, Agriculture, and Land Use Smaller PortionsWhile dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?
Deborah Clevenger 4/29/2021 10:51 AMThe biggest benefit of eating/serving smaller portions is being healthier overall. Portion control helps you digest your food easier, can help with maintaining weight, and can help with maintaining a healthy blood sugar level.

Deborah Clevenger 4/29/2021 10:47 AMI already incorporate the R’s in our lifestyle as much as possible, but I also believe that their are still ways to continue doing so that I may not be doing 100%. It makes me feel good as a person and also as a family they we do what we can to help.

The climate impact of meat can accelerate global warming. The impact on people could be increased risk of cancer and other diseases such as obesity, diabetes etc. -

Deborah Clevenger 4/23/2021 2:58 PMUntil this Challenge I had never heard of silvopasture. Now I understand a little bit more of what it means. I would say that one of the biggest advantage would be the shade and shelter for livestock from the trees.
