Maria Fernanda Acuna Gamez 5/04/2021 9:37 AMMy biggest challege was to do the vegan meals, I had no idea what to do, but I think you can start simple, so I created the morning or afternoon snack using only fruits, veggies and some carbs, they were good and fulling. I learned to become creative! -
Maria Fernanda Acuna Gamez 4/08/2021 7:58 AMToday while I was hanging my clothes to air dry them, I realized that small actions have not only for the environment but for us as well, as my electricity bill has gone from 65.000 colones a month to 47.000 colones since I stopped using the air drier. I still use it from time to time, but cut the usage at least by 90%. I also do laundry at night, during the times the electric rate is lower. -
REFLECTION QUESTIONFood, Agriculture, and Land Use Zero-waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Maria Fernanda Acuna Gamez 4/08/2021 7:54 AMIn my house we split the cooking between my 2 adult sons and myself. So they are now helping accomplish this goal, so they make sure they only prepare enough food with no leftovers and if someone is left, we use it the next day as part of the new meal. -
REFLECTION QUESTIONTransportation Use Muscle PowerHow do your transportation choices affect your engagement in your community? Does your experience or enjoyment differ while walking, riding transit, biking or driving?
Maria Fernanda Acuna Gamez 4/08/2021 7:50 AMThe convenient store is 300 mts away from my house, I used to take the car to go do basic small items shopping, now I am walking this distance. Small progress, but progress s -
REFLECTION QUESTIONFood, Agriculture, and Land Use Reduce Animal ProductsWhy do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?
Maria Fernanda Acuna Gamez 4/08/2021 7:48 AMThis has been the hardest one for me, I am used to eat meet all the time. So I am coming up with different recipes to try to comply with at least 1 per day.
Today I prepared a bean soup with rice, cilantro and added tomatoes -
REFLECTION QUESTIONTransportation Go for a Daily WalkWhat have you noticed on your daily walks? What have you enjoyed? What infrastructure changes could make your walks more enjoyable or possible?
Maria Fernanda Acuna Gamez 4/08/2021 7:46 AMI am loving this part of the challenge as since the pandemic started I stopped exercising and became very passive. This is forcing me to take time for me and this reduces the stress levels! -
REFLECTION QUESTIONFood, Agriculture, and Land Use Support Local Food SystemsDependable fresh food, supporting local farmers and building resilient communities are just a few benefits of local food systems. Which of these (or other) advantages inspire you the most?
Maria Fernanda Acuna Gamez 4/08/2021 7:44 AMI live in a town where they cultivate different vegetables and they go door to door to sell them, so by buying from them we are helping the community, the families that depend on this and us with better food
