    My biggest challege was to do the vegan meals, I had no idea what to do, but I think you can start simple, so I created the morning or afternoon snack using only fruits, veggies and some carbs, they were good and fulling. I learned to become creative!

    Today while I was hanging my clothes to air dry them, I realized that small actions have not only for the environment but for us as well, as my electricity bill has gone from 65.000 colones a month to 47.000 colones since I stopped using the air drier. I still use it from time to time, but cut the usage at least by 90%. I also do laundry at night, during the times the electric rate is lower.

    In my house we split the cooking between my 2 adult sons and myself. So they are now helping accomplish this goal, so they make sure they only prepare enough food with no leftovers and if someone is left, we use it the next day as part of the new meal.

    This has been the hardest one for me, I am used to eat meet all the time. So I am coming up with different recipes to try to comply with at least 1 per day.

    I am loving this part of the challenge as since the pandemic started I stopped exercising and became very passive. This is forcing me to take time for me and this reduces the stress levels!

    I live in a town where they cultivate different vegetables and they go door to door to sell them, so by buying from them we are helping the community, the families that depend on this and us with better food
