Sam Peterson 4/12/2021 10:42 AMSpent a beautiful weekend cleaning up the last freeze damage from my yard and replanting the xeriscaping. It's challenging finding native plants that can take Texas drought as well as negative temperatures if that's going to be a regular occurrence thanks to climate change, but we found some that should work. They'll be good for pollinators, too. Grateful we were able to save the herb garden! -

How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Sam Peterson 4/02/2021 2:59 PMI do a lot more plant-based cooking these days, buy local produce, and rarely eat meat, so now I'm trying to go the next step by making sure to use all the edible bits before composting. Things like broccoli stems are great in soups or casseroles, and carrot or potato skins can be crisped into "chips" or just left on if clean. -
Sam Peterson 4/01/2021 3:45 PMCelebrated Challenge Day 1 with a meatless lunch of chickpea and carrot tagine enjoyed in the sunshine. Veggie casserole for dinner tonight made with produce from Imperfect Foods. Cooking is so much more satisfying when there's no pile of trash to clean up afterwards!
