Amanda Harlfinger 3/15/2021 11:50 AMI've noticed the change in the weather on my walks. I've enjoyed the light breeze in my face while I listen to music. Infrastructure changes that could make my walks more enjoyable is create safer roads for people to walk on. -

How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?
Amanda Harlfinger 3/15/2021 11:48 AMA lot of skins are still edible as long as they are clean, so the skins can be included in the actual meal. As for tops and stalks, they can be used to bring flavor into food and/or made into a puree as an addition to the meal. -
REFLECTION QUESTIONFood, Agriculture, and Land UseWhile dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?
Amanda Harlfinger 3/15/2021 11:46 AMPeople tend to get larger portions because they think they are hungry, but you should actually stop eating when you're about 80% full. Eat till you aren't hungry, not until you are full. This is very beneficial to your health. -

Amanda Harlfinger 3/15/2021 11:43 AMPeople in richer countries eat more meat because I believe it is considered a luxury. As income rises, more luxuries are available and that includes meat. Eating more meat is actually not very healthy for our bodies and definitely not for our planet. A simple watch of the "Food Inc." documentary can explain that. -
