I've noticed the change in the weather on my walks. I've enjoyed the light breeze in my face while I listen to music. Infrastructure changes that could make my walks more enjoyable is create safer roads for people to walk on.
  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

A lot of skins are still edible as long as they are clean, so the skins can be included in the actual meal. As for tops and stalks, they can be used to bring flavor into food and/or made into a puree as an addition to the meal.
  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
While dishing food out, we tend to load our plates with more than we need. Using smaller plates helps to mitigate this. Aside from the environmental benefits, what other benefits might come from eating/serving smaller portions?

    Amanda Harlfinger's avatar
    Amanda Harlfinger 3/15/2021 11:46 AM
People tend to get larger portions because they think they are hungry, but you should actually stop eating when you're about 80% full. Eat till you aren't hungry, not until you are full. This is very beneficial to your health.
  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our bodies, our planet, and other people?

    Amanda Harlfinger's avatar
    Amanda Harlfinger 3/15/2021 11:43 AM
People in richer countries eat more meat because I believe it is considered a luxury. As income rises, more luxuries are available and that includes meat. Eating more meat is actually not very healthy for our bodies and definitely not for our planet. A simple watch of the "Food Inc." documentary can explain that.
  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
An average American throws out about 240 lbs of food per year. The average family of four spends $1,500 a year on food that they throw out. How would you rather use this money?

I would rather use that $1,500 on paying off my student loans!
  • REFLECTION QUESTION

Mindful eating is healthier for us than eating with distractions. How does your eating experience differ when practicing mindfulness?

I was able to eat a lot quicker than usual and focusing on my eating was able to let me finish my entire plate.
