  • REFLECTION QUESTION
    Food, Agriculture, and Land Use
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for utilizing every part of a vegetable. How can you incorporate using an entire vegetable, including the skins, tops, and stalks during your next meal prep?

I am so excited for my CSA to start for the summer in just a few short weeks. It is inspiring because not only do you get to enjoy fresh, healthy, sustainable food, it also connects you to the growing season and gives a time to connect with each plant as it grows and then fruits in the garden.
