    How difficult or easy was it to change your diet?

    The hardest thing for me is palm oil! It's hidden in so many things, including non-edible things like detergent. As long as I can stick to whole foods and cooking my own food, it's not that difficult. But if I need a quick high-calorie snack (which, as a nursing mother, I often do!), there's a high chance that processed food has palm oil in it, and unless I'm specifically seeking out products with sustainably-certified palm oil, I'm betting it's harmful to forests and their inhabitants.

    When I was a child, a family friend would take us to hike and forge streams in Fern Clyffe and other Shawnee National Forest-area parks in Southern Illinois. These experiences inspired my curiosity about ecosystems and plant identification, and taught me to enjoy being immersed in natural ecosystems.
